Three types of grapes grown in the nature of Modena and the traditions of artisans

Balsamic Vinegar of Modena is made by slowly stewing organic grapes grown in the sunny hills of Modena and aging them in oak barrels. The only raw material is, of course, grapes. It is made mainly from white Trebbiano with a moderate acidity, blended with Lambrusco and Sangiovese. Its simplicity allows the ingredients and technique to shine.

Balsamic's unique richness comes from simmering grape juice for a long time in a large pot. The resulting rich juice is called mast cod. This mast cod is the key to the flavor, but it is time-consuming and expensive, so in general balsamic for everyday use, the ratio of relatively inexpensive wine vinegar is increased and the amount of mast cod is adjusted.
Our balsamic vinegar is specially made with a higher proportion of must cod, so that you can enjoy the thrill of balsamic vinegar in your everyday life.

Modena is an ancient city in the Emilia-Romagna region, at the base of the Italian peninsula.
Famous for its Romanesque architecture, Modena is also a traditional balsamic-producing region.

Balsamic di Modena IGP is only awarded the title "aged" after three years.
After a further 12 years of aging, the wine is awarded the title "Traditional", and after 25 years it is awarded the title "Extra Vecchio".
