The olives used in Fattoria di Maiano's "Laudemio" are the "Frantoio" variety, native to Tuscany and characterized by its delicate spiciness, and the "Moraiolo" variety, which has a high polyphenol content and is very spicy.
The taste, thanks to the strict "Laudemio" management, has a freshness like freshly squeezed fruit, a vivid green scent like the moment the grass was mowed, and a pleasant sweetness and richness that gives depth to the oil. It leaves a lingering aroma, but quickly disappears with a sharp spiciness.
