A taste that can only be made with Salemipina

Salemipina was originally a farming family. Cherry tomatoes are grown outdoors and allowed to ripen on the vine, then cooked fresh in a large pot in the workshop next to the farm. The olive oil they use is also harvested and pressed on their own farm. Although the cooking pots are now larger for sale, the recipes were devised by Mamma Salem. The ingredients and cooking methods are simple, but everything is exquisite.

Avoid cooking as much as possible

Ripe cherry tomatoes are amazingly flavorful: sour, sweet, savory, and aromatic - all in abundance.
Therefore, we recommend pasta and a super simple tomato sauce! All you have to do is sprinkle a little Parmesan at the end to taste. Or, you can chill it, add finely chopped cucumber and celery, and enjoy it as a gazpacho-style soup.

Only precious cherry tomatoes

The cherry tomatoes (Ciliegino) used in the sauce are grown on the Salemipina farm, which is located on a hill in the Sicilian mountains, where the soil is well-drained and the breeze blows through.
The sauce is made using sun-ripened cherry tomatoes only during the summer when tomatoes can be harvested, which is why Salemipina's tomato sauce is fragrant and flavorful.

The Salemi family story

The Salemipina farm is located in Sortino, in the province of Syracuse, Sicily.
The Salemi family, who were olive farmers here, switched to organic farming 25 years ago, with the aim of adopting environmentally friendly methods.
The Salemipina estate, overlooking Mount Etna, is the perfect place to grow tomatoes. Thanks to the Mediterranean sea breezes and sunshine, it has mild winters and hot, dry summers.
Furthermore, the soil containing volcanic ash from Mount Etna makes it possible to grow Ciliegino (cherry tomatoes) with a high sugar content.

In Salemipina's 10 hectare farm, tomatoes, basil, zucchini, peppers, chillies and other vegetables, as well as olive trees, are grown organically, respecting the natural cycle. No preservatives, colourings or additives are used, and only fully ripe produce is harvested and processed in a short time using state-of-the-art equipment.
Even the oil that is the base of our important ingredients is made from fresh olives harvested at the Salemipina farm, and the producers' attention to detail is evident in every drop of the oil.
